Klodjan Koleshi is looking forward to a new adventure as one of the new owners of Trifon鈥檚 Pizza, located in the Canora Mall, which opened on May 11.
聽聽聽聽聽聽聽聽聽聽聽 Koleshi grew up in Athens Greece, a dynamic city with a population of several million. But at the age of 28, he decided to emigrate from Athens to Regina, a trip of close to 9,000 kilometres.
聽聽聽聽聽聽聽聽聽聽聽 Koleshi said he eventually became general manager of the Trifon鈥檚 Pizza location in the Uplands region of Regina. He has enjoyed his work there, as well as the slower pace of life in his new home.
聽聽聽聽聽聽聽聽聽聽聽 鈥淢y old neighbourhood in Athens had about 180,000 people, and Regina is not that much bigger,鈥� said Koleshi. 鈥淭here鈥檚 not nearly as much stress here, so there鈥檚 much more time to relax and enjoy life.鈥�
聽聽聽聽聽聽聽聽聽聽聽 When the opportunity came up to purchase the Trifon鈥檚 location in the Canora Mall, he was eager to become involved in a town even smaller and slower-paced than Regina.
聽聽聽聽聽聽聽聽聽聽聽 Koleshi is excited for the challenge of taking over the existing Trifon鈥檚 location and improving upon it, utilizing experience he gained at Trifon鈥檚 in Regina.
聽聽聽聽聽聽聽聽聽聽聽 He has purchased new furniture, and plans to add TVs, as well as video lottery terminals. But of course, the main focus will be on the food.
聽聽聽聽聽聽聽聽聽聽聽 Koleshi said the business will use fresh meat as much as possible and plans are in place to introduce home made items such as fish and chips and Greek desserts to the menu in the near future, to go with the food that the Trifon鈥檚 name is known for.聽
聽聽聽聽聽聽聽聽聽聽聽 The Canora Mall location will have five employees to start, said Koleshi. If things are busy, chances are good more will be hired
聽聽聽聽聽聽聽聽聽聽聽 Like many new ventures, there have been obstacles to overcome, including repairing a suddenly out-of-commission pizza oven mere hours before opening.
聽聽聽聽聽聽聽聽聽聽聽 But Koleshi takes it all in stride, and is looking forward to making new friends in Canora. Eventually he would like to split his time equally between Regina and the new Canora location.
聽聽聽聽聽聽聽聽聽聽聽 Hours at the Canora location are 11 a.m. to 10 p.m. seven days a week.
